Morning Glory Mini Muffins


I don't cook muffins often enough, my kiddies love different things for breakfast, so the other day I though hey let me make some muffins, but not any kind of muffins, some Oatmeal Mini Muffins!  So glad I made these, they LOVED them, I did also.  They tasted like a warm oatmeal cookie, all you need is a cup of hot tea and you will be in your Morning Glory, that's how I got the name to these yummy muffins.


Muffin
1 1/4 cup whole wheat flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
2 large eggs
1 cup light brown sugar
1/2 cup unsalted butter, softened
1 1/2 tsp vanilla
1/2 cup sour cream
2 cups oatmeal
Directions
Mix the first 5 ingredients together and set aside.  Mix butter, sugar  eggs, vanilla and sour cream together until its creamy.  Add flour mixture and oatmeal mix thoroughly   Fill muffin liners 1/2 full.  Bake for 12 minutes on 350.  Cool on wire rack!
