I am making alot of treats with oatmeal lately, not sure why, but everything that I make is right on as my older boys say! We love applesauce in our home, last year I made homemade applesauce in the crockpot, it was SO GOOD! Wish I had some of that to put into these muffins, but its ok store bought applesauce did just fine!
These muffins are great for breakfast with a yogurt, or for lunchtime snack, either way you will taste the apple, oatmeal and spices! Please forgive the pumpkin / Fall muffin tins, I wasn't thinking straight that day, I just made these last week when they came out the oven one of my boys said "Why did you put the muffins in a tin with pumpkins on it "I said it really doesn't matter they are going to get eaten right", and they were like Yes Mama, they are too funny!
These muffins are so nice and fluffy, and have alot of flavor even though they are sugar free, you wont even miss the sugar!
Muffins
2 tbsp canola oil
1/2 cup unsweetened applesauce
1 egg
1 1/2 cups white whole wheat flour
3/4 tsp baking soda
2 tsp baking powder
1/2 tsp nutmeg
1/2 tsp cinnamon
1 cup oats
diced apple pieces (optional)
Directions
Preheat oven to 350.
In a large bowl, beat together egg, oil and applesauce. Add flour, baking soda, oats, baking powder, nutmeg, diced apples (optional) and cinnamon, beat well. Fill muffin tins 1/2 full, bake for 20-25 minutes, cool on wire rack.
