Triple Chocolate Mint Cupcake Squares

We love anything CHOCOLATE in our house cupcakes, cookies, donuts I could keep going, there are times when I am making a treat and my kiddies will say "Mama next time you make those, put some chocolate in it" LOL!  They get that from there mama, I LOVE me some CHOCOLATE, but I haven't had a Hershey Chocolate Bar with Almonds (that is my favorite) in months.  I love it that my kiddies love the healthy desserts that I make and there is nothing wrong with adding a little chocolate to the mix every now and then!
Today I have a very YUMMY treat to share, Triple Chocolate Mint Cupcake Squares, now there's a delicious combination!  Guess what, this recipe has No Egg, it is so moist and Mint Chocolaty.
Cake Square
1 1/2 cups whole wheat flour
1 cup light brown sugar
1/4 cup cocoa
crushed Andes mint chocolates
1/2 cup chocolate chips
1 tsp baking soda
5 tbsp canola oil
1 tsp vanilla
1 cup cold water
1/4 cup applesauce or yogurt
Directions
Combine everything in your mixing bowl except the chocolate chips (they will go on top of the cake square).  Mix thoroughly and fill muffin tins 1/2 full and top with chocolate chips.  Bake on 350 for 18 minutes.  Cool on wire rack.
